Korea? Korean cuisine is rich in tradition and history and falls into two distinct camps: Korean Royal Court Cuisine and the more day-to-day cuisine that is enjoyed by the everyone. There is also, of course, plenty of fusion cuisine as well, as new styles and flavors are introduced and added daily, but these two styles prevail. Chef such as Sohui Kim of The Good Fork in Brooklyn, born in Seoul, Korea, bring these influences into their restaurants and create a unique style that brings things like Korean short-ribs and Kimchi rice with more traditional American fare such as crab cakes and gumbo. Korean Bulgogi, often called Korean "barbecue" had become wildly popular and means, literally, "fire meat." Often the meat is cooked by the diner right on a small grill at the table. Meats include thin-sliced shredded beef, but can also include thicker cut pork or ribs.
