You'll start with fundamental cooking and knife skills, sanitation and safety, and baking and pastry. As you progress through the program you’ll advance to specialized areas such as garde manger, regional and international cuisine, and purchasing and cost controls. You’ll learn the essentials of the field — how to make a good stock, how to function as part of a team, and what it takes to proficiently carry out the tasks of each work station in a professional kitchen. You’ll become proficient in general studies such as computer literacy, accounting, communications, and psychology. You'll be prepared for entry-level positions such as line cook, pantry cook, grillardin, or assistant baker.
